Stuffed Mini Meatballs in Marinara

Get the new year started right with Oliver’s! These mini meatballs are a study in appetizer excellence – stuff with cheese and slowly simmered in delicious marinara sauce, they’re beautiful on their own or as a part of a meatball slider.

Ingredients

  • 1 lb. Ground Beef
  • ¼ c. Pancetta, finely chopped
  • ½ c. Milk
  • ½ c. Breadcrumbs
  • 1 Egg
  • 2/3 c. Fresh Italian Parsley, finely chopped
  • ¼ c. Fresh Basil, finely chopped
  • 4 cloves Garlic, grated
  • ½ Yellow Onion, grated
  • 1 tsp. Dried Oregano
  • ¾ tsp. Salt
  • ½ tsp. Black Pepper
  • ½ c. Parmesan Cheese
  • 1 (25 oz.) jar Oliver’s Own Marinara Sauce
  • 4 oz. Mozzarella Cheese, cut into very small cubes
  • Olive Oil

Instructions

  1. Preheat oven to 400 degrees, and line a baking sheet with parchment paper. In a large mixing bowl, combine all ingredients except olive oil, cheese cubes, and marinara sauce until well mixed. To form meatballs, measure 1 tablespoon of meat mixture and press into a small patty. Place 1 cheese cube in the center and fold meat around cube, taking care to seal in cube completely. Repeat until with remaining cheese and meat mixture, arranging meatballs on prepared sheet tray.

  2. Brush meatballs with olive oil, then bake about 15 minutes or until browned. Serve with Oliver’s Own Marinara.
