Steak Bites with Blue Cheese Sauce

Ingredients

  • Blue Cheese Sauce:
  • 2 tablespoons salted butter
  • 2 teaspoons chopped fresh rosemary
  • 2 cloves garlic, minced
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup heavy cream
  • 1/3 cup crumbled blue cheese
  • 2 tablespoons chopped chives, plus more for garnishing
  • Steak Bites:
  • 2 pounds rib-eye steaks, cubed into bite-size pieces
  • 2 tablespoons salted butter, melted
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Heat a cast iron, or other heavy-bottomed skillet over medium-high heat.

  2. In a bowl, toss together the cubed steak, melted butter, Kosher salt, and pepper. Add to the heated skillet and cook until nicely seared on all sides, 4 to 5 minutes total. Remove the steak bites to a plate to rest and return the skillet to the heat.

  3. Lower the heat to medium and add 2 tablespoons salted butter, melt. Stir in the rosemary, garlic and a pinch of salt. Cook for 1 minute, until the garlic is heated through and becomes fragrant. Add the cream and bring to a boil. Reduce heat to low and simmer, then stir in the blue cheese, chives and black pepper to taste. Transfer to a serving bowl.

  4. Place the steak bites on a platter, with the sauce on the side. Garnish with chives and serve with toothpicks or cocktail forks. Serves 8 to 12 as an appetizer.
