Spicy Kimchi Noodle Stir Fry

Ingredients

  • 1 lb. Chicken Breasts, in bite-sized pieces
  • 1 c. Kimchi, drained & chopped
  • 3 Scallions, thinly sliced
  • 4 Eggs, poached with the yolks still runny
  • 3 packages Instant Ramen
  • 1 tbsp. Sesame Seeds (for garnish)
  • 2 tbsp. Vegetable Oil
  • Sauce
  • 2 tbsp. Soy Sauce
  • 2 tbsp. Kimchi Juice
  • 1 tsp. Sesame Oil
  • 2 tbsp. Honey
  • 1 tsp. Red Chili Flake
  • 1 tsp. Fresh Garlic, chopped
  • 1 tsp. Fresh Ginger, grated
  • 2 tsp. Gochujang (Korean fermented chili paste)

Instructions

  1. In a small bowl, whisk together sauce ingredients until combined and set aside. Heat a wok or cast iron skillet on medium-high heat; when very hot, add oil, swirling to coat. Add chicken and cook until chicken turns opaque and begins to brown. Add kimchi and cook until kimchi has just softened, then add sauce. Stir until evenly combined.

  2. While chicken is cooking, heat water in a small pot until boiling. Cook ramen until barely softened, then remove and drain. Add ramen to wok and mix until stir fry is evenly distributed and noodles are coated in sauce. Add green onions and cook additional 2 minutes. Serve topped with a poached egg and sprinkled with sesame seeds.

  1. I am going to make this vegan, organic and gluten-free by substituting with tempeh and vegetables such as shiitake, portobello or maitake mushrooms, broccoli, kale or bok choy. I will use coconut aminos and experiment with garlic or sriracha aminos, and I will use Lotus brand brown rice and quinoa ramen. I boost nutrition by adding a large amount of sesame seeds. Oliver’s sells all of these things organic. This is going to be delicious!
