Rustic Fresh Peach Galette

Summer stone fruit is here! Fresh at Oliver’s this week are Nick Bolt Organic White and Yellow Peaches and Nectarines. This recipe is the perfect way to enjoy fresh peaches, it is easy to make and even easier to eat! Be sure to have a slice a few minutes out of the oven while the peaches are warm and melt in your mouth.

 

  • Serves: 4-5 servings
  • Prep Time: 15 minutes
  • Cook Time: 20 minutes

Ingredients

  • 1 store bought frozen pie crust
  • 1 pound fresh yellow peaches, halved and pits removed
  • 1/2 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • powdered sugar, for dusting

Instructions

  1. Preheat oven to 425 degrees and prepare a cast iron skillet or baking sheet with either non-stick spray or parchment paper.

  2. Cut peach halves into thin slices and mix with cinnamon, sugar and salt. Roll out dough to about 1/4 inch thickness and about 1 foot in diameter. Lay dough in prepared pan and top with peach mixture. Pleat dough edges to seal.

  3. Bake for 15-20 minutes or until crust is golden and peaches are tender. Allow tart to cool, and dust with powdered sugar before serving.
