Nectarine & Blackberry Galette

Ingredients

  • Crust
  • 1 1/2 c. All-Purpose Flour
  • 1/2 tsp. Sugar
  • 1/4 tsp. Salt
  • 1/2 c. Unsalted Butter, kept very cold & cubed
  • 1/4 c. Ice Water
  • Filling
  • 1 1/2 lb. fresh Nectarines, sliced
  • 1 1/2 c. fresh Blackberries
  • 2 tbsp. Honey
  • 1/2 tsp. Cinnamon
  • 1/8 tsp. Cardamom
  • 1 tsp. All-Purpose Flour
  • 2 tbsp. Unsalted Butter
  • 1/4 tsp. Salt
  • 1 Egg, beaten with 1 tbsp. Water

Instructions

  1. To make the crust, stir together flour, sugar, and salt in a large bowl. Leave the butter in the fridge to keep it extremely cold. When ready, cut butter into flour mixture until it's the texture and color of sand. Begin slowly adding the ice water, 1 tbsp. at a time, stirring until a rough dough begins to form. Work the dough by hand until it comes together into a rough ball; cover tightly and chill until ready.

  2. Preheat the oven to 350 degrees. In a large bowl, combine sliced nectarines, blackberries, honey, cinnamon, cardamom, 1 tsp. of flour, and salt. When dough is chilled, roll out into a rough circle, about 10 inches in diameter, and place on a baking sheet lined with parchment. Pile fruit mixture in the center and begin folding up edges to contain the filling. Brush with beaten egg and distribute 2 tbsp. of butter in pieces across the exposed filling. Bake for 1 hour, then allow 15 minutes to cool before serving so filling can set.
