Mexican Street Corn Salad

A fresh and delicious salad, this makes a perfect side dish for any summer party.

Ingredients

  • 5 ears of Corn, boiled or grilled
  • 1/2 Avocado, diced
  • 1/2 Red Onion, finely chopped
  • 1 c. Cotija Cheese
  • 6 Green Onions, thinly sliced
  • Dressing
  • 1/3 c. Sour Cream
  • 1/4 c. Mayonnaise
  • 1/2 c. Lime Juice
  • 1 tsp. Cumin
  • 1 tsp. Chili Powder (plus extra for garnish)
  • 1 tsp. Garlic Powder
  • 1/2 tsp. Salt

Instructions

  1. Whisk together ingredients for dressing and set aside until needed.

  2. Using a sharp knife, slice corn kernels from cob and place in a large bowl. Fold together corn, avocado, cilantro, and green onions, then cover in dressing and toss. Fold in cotija and sprinkle with chili powder to finish.
