Mediterranean Couscous Salad

Great for sharing, this couscous salad makes an awesome addition to any picnic spread. We’ve loaded it up with cucumbers, tomatoes, and olives, as well as loads of delicious herbs. Whether it’s a special trip to someplace new or a well-loved favorite spot, this salad makes the perfect side dish to a day spent in nature!

Ingredients

  • 2 c. Couscous, cooked & cooled
  • 1 English Cucumber, halved & seeds removed
  • 1 c. Pitted Kalamata Olives, sliced in half
  • 1 c. Cherry Tomatoes, sliced in half
  • 1 Shallot, finely diced
  • 1 Red Bell Pepper, diced
  • ½ c. Crumbled Feta Cheese
  • 2 tbsp. Fresh Parsley, chopped
  • 2 tbsp. Fresh Mint, chopped
  • ¼ c. Lemon Juice
  • ¼ c. Olive Oil
  • 2 tbsp. Red Wine Vinegar
  • 1 clove Garlic, grated
  • 1 tsp. Dried Oregano
  • Salt & Pepper

Instructions

  1. In a medium bowl, whisk together lemon juice, vinegar, olive oil, oregano, parsley, and mint, then season with salt and pepper to taste.

  2. In a large serving bowl, combine couscous, cucumber, olive, tomatoes, shallot, and bell pepper and toss. Pour on dressing and toss again to evenly coat, then fold in feta cheese. Season with additional salt and pepper if desired.
