Heirloom Tomato BLT

The time is ripe for local, organic heirloom tomatoes. These multi-colored, oddly shaped beauties are bursting with the vibrant favors of summer. There’s no need to dress up heirlooms with other ingredients and seasonings: The best way to enjoy them is with simple preparation. Elevate your BLT’s and more with these favorites of summer. The growing season for heirloom tomatoes only lasts through late summer, so get them before they’re gone!

Ingredients

  • 4 slices of Cloverdale Pepper or Applewood Bacon
  • 2 leaves of lettuce
  • 2 slices organic local heirloom tomatoes
  • 2 slices sourdough bread
  • Mayonnaise
  • Kosher salt

Instructions

  1. Cook the bacon slices in a large skillet over medium-high heat until evenly browned, about 10 minutes. Drain bacon on a paper towel-lined plate. Wipe bacon grease out of the skillet and return to the stove top.

  2. Butter both sides of the bread slices and toast in the same skillet you used to cook the bacon. Toast until the bread is lightly browned.

  3. Once the bread it toasted spread mayonnaise over one side of each piece of bread. Arrange the lettuce, cooked bacon and tomato slices on one slice of bread. Sprinkle kosher salt and freshly ground black pepper on the top of the tomato slices and place the second slice of bread, mayo side down on top. Enjoy!
