Fresh Mixed Greens Salad with Kumquats and Pistachios

There’s nothing like fresh citrus to brighten up a cold winter, and at Oliver’s this week we are featuring the bounty of Winter Citrus! On sale is an array of the best citrus that California has to offer, from Blood, Navel and Cara Cara Oranges to Kumquats and local Meyer Lemons! This recipe uses fresh Kumquats and fresh Cara Cara Oranges to create a delightful and flavorful salad that will  bring some zing to your winter.

 

  • Serves: 4 servings
  • Prep Time: 10 minutes

Ingredients

  • one 5 oz. container Earthbound Farm 50/50 Spinach and Spring Mix
  • 8-10 Kumquats, washed and thinly sliced (remove any seeds you find)
  • 1 small avocado, cut into chunks
  • 3 tablespoons shelled salted pistachios
  • Sliced cherry tomatoes
  • Sliced cucumber
  • For the vinaigrette:
  • 3 tablespoons freshly squeezed Cara Cara orange juice
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon Dijon mustard
  • pinch each salt & pepper

Instructions

  1. Place the greens in a salad bowl or on a large platter. Top with the kumquats, avocado, tomato, cucumber and pistachios.

  2. Whisk the vinaigrette ingredients in a small bowl, then drizzle the dressing on the salad.

  3. Serve right away.
