Easter Egg Salad

Now that Easter brunch & the big egg hunt is over… what to do with your carton of leftover hard-boiled eggs? Eat them, of course!


  • 8 hard-boiled eggs
  • 1/2 c. mayonnaise
  • 1 tsp. yellow or Dijon mustard
  • 1/4 c. chopped green onion
  • 1-2 ribs of finely chopped celery (optional)
  • 1/4 tsp. paprika
  • Salt & pepper, to taste


  1. Peel and chop the hardboiled eggs.

  2. Please the chopped eggs in a bowl, and stir in the mayonnaise, mustard, green onion and celery. Season with salt, pepper, and paprika.

  3. Stir and refridgerate, or serve immediately on your favorite bread or crackers!
