Frozen Yogurt Blueberry Lemon Popsicles

These frozen yogurt blueberry popsicles are swirled with sweet berries and tart lemon for a beautiful, fresh spring dessert!

  • Serves: 6 popsicles
  • Prep Time: 30 minutes
  • Cook Time: 2-3 hours

Ingredients

  • 3 c. Strauss Organic Greek Yogurt
  • 4 c. Fresh Blueberries, divided
  • 3/4 c. Sugar or 2tbs. Stevia
  • 1 tsp. Lemon Juice
  • Popsicle Molds & Sticks

Instructions

  1. Combine 3 cups blueberries, sugar, and lemon juice in a medium saucepan. Cook for about 30 minutes or until thick, stirring constantly. Remove from heat and cook completely. Stir in reserved fresh blueberries.

  2. To make popsicles, alternate blueberry mixture with yogurt in popsicle molds. Place popsicle sticks 3/4 of the into molds and freeze until solid about 2 to 3 hours.

  3. For a healthier version, omit sugar or replace with 2 teaspoons Stevia.
