Blueberry Lemon Popsicles

  • Cook Time: 2-3 hours


  • 3 c. Lemon Yogurt
  • 4 c. Fresh Blueberries, divided
  • 3/4 c. Sugar
  • 1 tsp. Lemon Juice
  • Popsicle Molds & Sticks


  1. Combine 3 cups blueberries, sugar, and lemon juice in a medium saucepan. Cook for about 30 minutes or until thick, stirring constantly. Remove from heat and cook completely. Stir in reserved fresh blueberries.

  2. To make popsicles, alternate blueberry mixture with lemon yogurt in popsicle molds. Place popsicle sticks 3/4 of the into molds and freeze until solid about 2 to 3 hours.

  3. For a healthier version, omit sugar or replace with 2 teaspoons Stevia.
