Blueberry & Balsamic Marinated Flank Steak

This blueberry steak marinade is the perfect way to make any cut flavorful and tender, but we particularly like it on Choice 100% Angus Flank Steak. Marinate your steak ahead of time for an easy dinner that tastes divine!

Ingredients

  • 1 (1 1/2-2lb) Choice Flank Steak
  • 6 oz. Fresh Blueberries, washed
  • 1/4 c. Balsamic Vinegar
  • 1 tbsp. Low-Sodium Soy Sauce
  • 1/2 c. Olive Oil
  • 1 tsp. Fresh Rosemary
  • 1 tsp. Fresh Thyme
  • 1 Large Lemon, zested & thinly sliced
  • 1/2 tsp. Chili Flakes
  • 3 Garlic Cloves
  • 1 tbsp. Honey
  • 1 tbsp. Freshly Cracked Black Pepper
  • 1 tbsp. Kosher Salt

Instructions

  1. Combine blueberries, balsamic, olive oil, rosemary, thyme, lemon zest, chili flakes, garlic, honey, black pepper, and salt in a blender or food processor. Process on low until a thick, chunky sauce forms.

  2. Place flank steak in a resealable plastic bag, and pour marinade into bag. Massage so that steak is completely coated in marinade, then seal the bag, squeezing out as much air as possible.

  3. Allow steak to marinade for at least 1 hour or up to 24 hours, then prepare using your favorite method!
