Beer-Battered Asparagus with Oliver’s Citrus Aioli

When the moon is in the seventh house, and Jupiter aligns with Mars, it shall be the dawning of the age of… ASPARAGUS. Yes, we’ve sprung into Spring with delicious spears of organic, California asparagus for just $2.99 per pound! These tender spears are delicious no matter how you cook them, so STALK up while the getting’s good! These fried asparagus are great for when you’re craving a nibble that’s simply delicious. Just dunk fresh asparagus in a beer batter, fry to crispy perfection, then dunk again in Oliver’s Own Citrus Aioli for good measure! Try them as half-time snacks during your favorite game, or enjoy them anytime you’re craving asparagus.

Ingredients

  • 1 lb. Organic Asparagus Spears, washed & trimmed
  • 1 (12oz) Lager Beer
  • 1 Large Egg, well beaten
  • 1 1/2 c. All-Purpose Flour
  • 1 tbsp. Salt
  • 2 tsp. Black Pepper
  • 2 c. Peanut or Vegetable Oil
  • 1 (8oz) tub Oliver’s Own Citrus Aioli

Instructions

  1. Combine 1 cup flour with beer, egg, salt, and black pepper. Spread remaining 1/2 cup of flour in a small plate, and heat oil to 375 degrees in a deep skillet. When ready to fry, dredge prepared asparagus first in reserved flour then in beer batter. Shake gently to remove excess, then carefully drop into hot oil.

  2. Fry asparagus in batches, turning occasionally, until golden brown and tender (about 5 minutes). When cooked, place on a baking tray lined with paper towels and fitted with a rack. Serve finished asparagus with plenty of Oliver’s Own Citrus Aioli for dipping!
