Roasted Romanesco with Garlic and Lemon

Romanesco (also known as Roman Cauliflower) is very similar to broccoli – but looks so much cooler! Try it to add a little pizazz to your next dinner table.

  • Serves: 4 servings

  • Cook Time: 20 minutes

Ingredients

  • 1 head Romenesco, cut into bite-size pieces
  • 2-3 tablespoon olive oil, or more to taste
  • 8 cloves garlic, minced
  • 1-2 tablespoons lemon zest, or to taste
  • Salt to taste
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

  2. Spread Romanesco onto the prepared baking sheet; drizzle with olive oil and crushed garlic. Mix everything around.

  3. Grate the lemon zest over the Romanesco and sprinkle with salt and pepper.

  4. Roast in the preheated oven until tender, 15 to 20 minutes. Add more lemon zest before serving, if desired.
